A chef in a fine dining restaurant is constantly learning. One should regularly attend a chef school for brush-ups on techniques. If possible, attend a short course for a couple of weeks focusing on your cuisine or specialty of interest. Chef schools often offer mini refresher courses and additional cooperative training with restaurants to keep yourself up to date on the latest techniques.
It helps to keep up to date on new techniques. It also helps you as it prevents boredom as you'll learn new recipes and methods. Attending some cooking classes at a chef school may help keep things interesting as you learn new recipes and prepare new meals.
