January 5, 2007, Newsletter Issue #36: Italian Cooking: Tips for Frying Fish

Tip of the Week

Frying Fish:

Generally everyone loves fried anything. Success at frying properly is as follows:

Use clean neutral oil, like peanut or soy bean oil
Proper temperature of oil should be about 350 degrees to 375 degrees
Item being fried is dry when entering oil
Do not over crowd the fry basket or frying pan or the temperature will be reduced and items will not cook properly
When golden brown and cooked through, drain and season immediately
